To ensure we use the very best ingredients, we use locally sourced meats and produce wherever possible. When choosing our suppliers we look for ethical practices and sustainable farming. By hand-picking reputable local suppliers, we support our local economy, local employment and ensure our ingredients are of the highest quality.

Hereford’s land-use is mostly agricultural and the county is well known for its fruit and cider production, and the Hereford cattle breed, with Herefordshire beef being world renowned for its unique flavour and marbling of the meat.

Wye Valley Salads is run by Amanda who grows high-quality, chemically-free greens, picked and packed locally, in the Wye Valley. Amanda’s organic produce is full of flavour, dedication and care, leading to her supplying some of the finest Michelin-starred restaurants in and around Wales.
HAY CHARCUTERIE
Hay Charcuterie - which is owned and run by Chef & Charcutier Rod Lewis (originally trained at Le Cordon Bleu, London) and his wife Rachael. Hay Charcuterie products are hand-crafted in small batches using high-welfare, local, rare breed pork and premium ingredients to ensure the highest quality possible. This attention to detail has granted them Guild of Fine Foods ‘Producer’ status as part of the Great Taste Awards.

Herefordshire Meats is a family run business who are proud to supply Herefordshire with high-quality, local produce. They provide a great service and Shaun happens to be a long-standing friend of mine from my butchery days.

Alex Gooch is an award winning artisan bakery-maker of nourishing bread, made slowly with understanding and love. Handcrafted breads made the traditional way. Using wild yeast, organic flour and long fermentations creates sustaining, flavoursome breads with personality.

Colcombe House producers of Herefordshire asparagus and cider. A strange combination, but we only use Keir’s asparagus in our cooking, the flavour of which is unbeatable!

Snowden & Co. is a highly established fresh fish supplier based in Wales. It is an independent, family-run business and Paul is a great friend of mine, going back at least ten years now… With almost a century of heritage in the industry, they ethically source the finest fish from all over the world. It’s real, salt-of-the-earth fish-mongering!
